January at Grand Blue is a true feast for plant-based cuisine lovers. To mark Veganuary, we’re showcasing dishes from our menu that are always available and sure to delight both vegans and those looking to try something new and flavorful.

Discover our meticulously crafted vegan dishes that surprise with their taste and creativity:

 

Starters

  • Pumpkin Tricks with Sesame Sauce – sumac, Gdańsk pear, walnuts, green algae, cranberry
  • Vegan à la Matias – oyster mushroom, horseradish mayo, brown algae, lemon, pumpernickel

Soups

  • Chestnut Potage with Hemp “Meat” – Jerusalem artichoke, saffron milk caps, roasted pumpkin
  • Fermented Beet Cream – cabbage croquette, lingonberry, kale

Main Dishes

  • Kale Orecchiette with Breaded Tofu – zucchini, sun-dried tomatoes, Kociewie-style pumpkin
  • Porcini Risotto with Rosemary and Thyme – romaine lettuce, garlic croutons, mushrooms

Dessert

  • Date Brownie – red bean, hazelnuts, spirulina, quince liqueur

Every morning, from 7:00 to 10:30 (until 11:00 on weekends), we invite you to enjoy delicious vegan and vegetarian dishes available at a dedicated station in our breakfast buffet, as well as in our à la carte menu. It’s the perfect way to start your day healthy and deliciously!
